Apple Pancakes

Adapted from New Vegetarian Cuisine
6 servings

Ingredients

1 ¼ cup unbleached flour
2 tsp. Baking powder
1 tsp. Cinnamon
½ tsp. Nutmeg
½ tsp. Ginger
¼ tsp. Cloves
1cup apples - shredded
1 1/3 cup skim milk
¼ cup egg white - whipped
½ cup fat-free sour cream
½ cup granulated sugar

Instructions

Prepare skillet with cooking spray and heat on medium heat until hot. In a mixing bowl, combine flour, baking powder, cinnamon, nutmeg, ginger, and cloves. In another mixing bowl, combine apples, milk, egg white, sour cream, and sugar. Mix dry ingredients with wet ingredients just until moistened. Ladle in the batter, using 2 or more tablespoons per cake. Cook for 2 minutes, then flip carefully and cook for 2 minutes more.
